Ingredients
For the baking dish
- 8-inch by 8-inch baking dish
- Butter or non-stick spray
Lemon crumb topping
- ½ cup sugar
- ⅓ cup all-purpose flour
- 1 teaspoon lemon zest
- ¼ cup unsalted butter, cut into chunks
Cake
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup white sugar
- ¼ cup unsalted butter, room temperature
- 1 large egg
- ½ cup whole milk
- 2 tablespoons fresh lemon juice
- 2 cups fresh blueberries
- 2 teaspoons fresh lemon zest
- Optional: powdered sugar, for dusting
Instructions
- Preheat the oven to 375°F (190°C). Grease an 8-inch by 8-inch baking dish.
- Make the crumb topping by mixing sugar, flour, lemon zest, and butter until crumbly. Set aside.

- In a separate bowl, combine flour, baking powder, and salt. Set aside.

- In another bowl, cream the sugar and butter, and then add the egg.

- Then mix in the milk and lemon juice.

- Gradually add the flour mixture to the wet ingredients and mix until combined.

- Fold in the blueberries and lemon zest.

- Pour the batter into the prepared dish and smooth the top.

- Sprinkle the crumb topping evenly over the batter.

- Bake for 25–30 minutes until golden and a toothpick comes out clean.

- Check after 20 minutes and loosely cover if browning too fast.
- Cool completely. Dust with powdered sugar before serving, if desired.
