Ultra-Creamy Banana Cream Pie with Homemade Crust

This is my banana cream pie recipe. It’s made with a homemade crust, vanilla custard, and fresh bananas.

The pie needs time to chill before serving so it sets properly and slices cleanly.

Banana Cream Pie

This is the banana cream pie I make at home. It serves eight slices and needs time to chill before serving.

Ingredients

Pie Crust Ingredients

  • 1½ cups all-purpose flour, plus extra for rolling
  • ½ teaspoon salt
  • ⅔ cup vegetable shortening
  • 3–6 tablespoons ice-cold water

Pie Filling Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 large eggs
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • ¼ cup cornstarch
  • 1 ounce unflavoured gelatin
  • 2 tablespoons unsalted butter
  • 2 teaspoons real vanilla extract
  • 4–6 ripe bananas, sliced

Optional, to Serve

  • Whipped cream
  • Sliced bananas

Instructions

  1. Preheat the oven to 200°C (400°F). Place the oven rack in the centre position.
  2. To make the crust, add the flour, salt, and shortening to a bowl. Mix until combined.
  3. Add the ice-cold water a little at a time. Mix until the dough comes together and forms a ball.
  4. Roll the dough into a 12-inch circle on a floured surface.
  5. Transfer to a 9-inch deep-dish pie plate.
  6. Trim excess dough, fold the edges under, and crimp.
  7. Line with parchment and fill with pie weights or dry beans.
  8. Blind bake for 15 minutes. Remove weights and set the crust aside.
  9. To make the filling, add milk, cream, eggs, sugar, salt, cornstarch, and gelatin to a saucepan.
  10. Whisk and cook over medium-low heat, stirring often.
  11. Once thick, remove from heat.
  12. Stir in the butter and vanilla.
  13. Layer sliced bananas over the pie crust.
  14. Pour the custard over the bananas and smooth the top.
  15. Reduce the oven temperature to 180°C (350°F).
  16. Bake for 20–25 minutes.
  17. Cool completely, then refrigerate for a few hours or overnight.
  18. Slice and serve with whipped cream and extra bananas if desired. Banana Cream Pie

Notes

Chilling helps the pie set fully.
The flavour improves after resting overnight.
Store leftovers covered in the fridge.
