Pistachio Granola Bars (Nutty and Easy to Make)

This is my easy pistachio granola bars recipe. They’re nutty, lightly sweet, and simple to make at home. I make these when I want a quick snack I can prep once and eat all week.

I like this recipe because it uses basic ingredients and comes together fast. Pistachios add crunch and healthy fats, cranberries add a little sweetness, and coconut gives extra texture.

This is my easy pistachio granola bars recipe. They’re nutty, lightly sweet, and simple to make. I bake them when I want an easy snack that lasts a few days.

Ingredients

  • 2¼ cups rolled oats
  • ¾ cup shelled pistachios, roughly chopped
  • ½ cup unsweetened shredded coconut
  • ¼ cup sesame seeds
  • 1 cup dried unsweetened cranberries
  • ¼ teaspoon salt
  • 5 tablespoons coconut oil, melted
  • ¼ cup honey or agave syrup
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking tray with parchment paper. Pistachio granola bars
  2. In a large bowl, combine oats, pistachios, coconut, sesame seeds, cranberries, and salt. Pistachio granola bars
  3. Pour in the melted coconut oil, honey, and vanilla. Mix until fully combined. Pistachio granola bars
