Waffle Ice Cream Sandwich
This is my easy waffle ice cream sandwich recipe. It’s made with blueberry almond ice cream and caramel waffles. It’s simple and perfect for warm days.
Ingredients
- 1 banana, sliced and frozen
- 1½ cups frozen blueberries
- ½ cup fresh blueberries
- ½ cup coconut cream
- ½ cup almonds, chopped
- 6–8 caramel waffles
- Rainbow sprinkles
- Chocolate or caramel sauce, optional
Instructions
- Add the frozen banana, frozen blueberries, and coconut cream to a food processor.

- Blend until smooth and creamy.
- Transfer the mixture to a container.
- Stir in the almonds and fresh blueberries.

- Smooth the top and freeze overnight.
- To assemble, scoop ice cream between two caramel waffles.

- Roll or sprinkle the sides of the ice cream with sprinkles before serving.
