Ingredients
- ½ cup sugar-free peanut butter
- 6 tablespoons unsalted butter, room temperature
- ⅓ cup real maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons dark unsweetened cocoa powder
- ⅛ teaspoon salt
- 1½ cups quick cook oats
Instructions
- Line a large baking sheet with parchment paper or a silicone baking mat.
- In a microwave-safe bowl, combine peanut butter, butter, maple syrup, and vanilla. Microwave for 1 minute at 50% power, then stir until smooth.
- Stir in cocoa powder and salt until fully combined.
- Add the oats and mix until evenly coated.
- Drop rounded tablespoons onto the prepared baking sheet.
- Freeze for at least 30 minutes until set.
- Remove from the freezer and serve. Store leftovers in the fridge.
