This is one of my favourite easy dinners because everything cooks on one pan and the flavour is amazing. The chicken is marinated in my simple chicken balsamic vinegar marinade, which gives it a juicy, tangy taste with a hint of sweetness from the orange and maple syrup.

I love how the sweet potatoes and broccoli roast at the same time, so the whole meal is ready without any fuss. It’s colourful, healthy, and perfect for busy nights when I want something comforting but still fresh and light.

Balsamic Chicken Breasts
Juicy balsamic chicken roasted with sweet potatoes and broccoli. Made with my easy chicken balsamic vinegar marinade and cooked on one pan for a healthy, fuss-free dinner.
Ingredients
- ½ cup balsamic vinegar
- ½ cup extra virgin olive oil, divided
- 1½ tablespoons pure maple syrup
- 2 teaspoons orange zest, preferably organic
- 3 tablespoons fresh orange juice
- 3 tablespoons fresh thyme leaves
- 1 tablespoon fresh sage, finely minced
- Sea salt and black pepper, to taste
- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- 1 12-ounce bag frozen broccoli florets
- 1 medium red onion, cut into thick slices
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Instructions
Start by preparing the marinade: mix the balsamic vinegar, two tablespoons of olive oil, maple syrup, orange zest, orange juice, thyme, and sage in a bowl, seasoning with salt and pepper. Place the chicken in a ziplock bag, pour in the marinade, and let it soak up the flavors for at least 30 minutes.
Next, preheat the oven to 400°F (200°C). On a baking sheet lined with parchment, arrange the marinated chicken alongside sweet potatoes, broccoli, and onion tossed with the remaining oil and spices. Roast for 20-25 minutes until everything is tender. Your kitchen will be filled with mouthwatering scents!
