Cheesy Chicken Enchiladas (Easy, Comforting, and Full of Flavor!)

This is my easy chicken enchiladas recipe — rich, cheesy, and packed with comforting flavor. It’s one of those dishes that feels indulgent but is simple enough to make after a busy day at work.

I love this recipe because it comes together quickly with everyday ingredients and very little fuss. You can use red or green enchilada sauce depending on what you have on hand, and the mix of tender shredded chicken, creamy sour cream, and melted cheese makes it incredibly satisfying.

It bakes beautifully with a golden, bubbly top and fills the kitchen with a warm, savoury aroma. These enchiladas are easy, hearty, and delicious — the perfect midweek meal when you want something homemade without spending hours in the kitchen.

Below is my full recipe so you can make it at home.
