Cheesy Chicken Enchiladas
This is my easy chicken enchiladas recipe. It’s creamy, cheesy, and full of flavour. The tortillas bake until soft, the cheese melts beautifully, and the sauce ties everything together. I make it when I want something comforting after work with very little effort.
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 medium garlic cloves, minced
- 2 ½ cups red or green enchilada sauce
- 2 cups cooked, shredded chicken
- ½ cup full-fat sour cream
- ½ cup frozen corn, defrosted
- 1 ½ cups Monterey Jack cheese, shredded
- 1 cup Oaxaca cheese, shredded
- 8 flour tortillas
- ¼ cup fresh cilantro, chopped
- Sea salt and black pepper to taste
Instructions
1. Preheat the oven to 375°F (190°C). Lightly grease a casserole dish with olive oil. 
2. Heat olive oil in a large skillet over medium heat. Add garlic and let become fragrant, approximately 1-2 minutes. 
3. Pour in the enchilada sauce and warm through for another 3-4 minutes. 
4. Combine shredded chicken, sour cream, corn, and half of the cheeses in a bowl. 
5. Mix well and season with salt and pepper. 
6. Cover each tortilla in the warm sauce and fill with the chicken mixture. 
7. Roll tightly. 
8. Place filled tortillas in the casserole dish. 
9. Pour the remaining sauce over the top and sprinkle with the remaining cheese. 
10. Bake for approximately 25-30 minutes until the cheese has melted and begins to brown. 
9. Serve sprinkled with fresh cilantro and enjoy!
